Recipes -Pork Satay
Serves 4
Shopping List:
1 kg (2 lbs) shoulder of Sleeda Farm pork, diced pieces
Marinade
1 tablespoon. soy sauce
Half tablespoon. rice vinegar
1 tablespoon. oil
Half tablespoon. red curry paste
Sauce
1 can coconut milk
1 tablespoon. red curry paste
2 cloves garlic, chopped
1 tablespoon. fish sauce/soy sauce
1 teaspoon sugar
1 tablespoon peanut butter
1 tablespoon fresh coriander, chopped
Spicy Cucumber Salad
2 cucumbers, seeds removed and sliced
1 tablespoon fish sauce/soy sauce
1 tablespoon Oil
1 tablespoon lemon juice
1 tablespoon sugar
1 red chilli, sliced
2-3 shallots, sliced & Salt to taste
To Cook:
- Thread the pork pieces onto eight skewers and place in a shallow dish.
- Mix the marinade ingredientstogether.
- Pour the mixture over the kebabsand leave for half an hour
- Mix the sauce ingredients together and simmer for 5-10 minutes.
- Grill the kebabs for 5-6 minutes on each side.
- Serve the sauce with the kebabsand the Cucumber Salad
